At first I was skeptical about spending a lot of money on kitchen knives, but after the first use I quickly calmed down. These knives feel solid, well balanced and easy to use; Of course they are also extremely sharp. The chef handled the onion and steak with ease, while slicing mushrooms with veggies was far from "risky." I didn't need many specialty knives to suit my needs, which made this set almost perfect; However, I completed it with a matching Twin 8" Bread Knife. This set offers a unit with additional slots if you want to expand it later. I'll probably get the matching Santoku at some point in the near future. I don't think it was possible to get one Use scissors or a utility knife but I see no reason why they shouldn't work the same way Do yourself a favor and if not these knives invest in a quality set.
