Durable and perfect size for hash browns. Quickly handles cheese, potatoes and anything else you need to grate. I use it to chop onions for Indian, Saudi and Moroccan cooking. I love this tool! It feels like it will never wear out. Here's a tip for the perfect pancakes. steam a few large, whole, russet potatoes the night before. Boil them in their skins for two minutes. Drain the water and leave them until morning. In the morning, peel them, grate them and cook them in a heavy skillet over medium-high heat, a tablespoon of oil and a tablespoon of butter. Scatter over the pieces to keep them tightly packed. Season with salt and pepper. Leave them on fire for a while to form a crispy golden crust. Resist the temptation to wiggle or poke them. Just leave them alone until they have a nice crust. Invert onto a plate, add more butter to the pan and carefully set the pancakes back. Allow this side to brown a bit and you're done. Steaming reduces stickiness, holds the color so they don't go gray, and makes them fluffy with a nice golden crust.
