Essential for food safety

I'm a professional chef, graduated from culinary school and worked in half a dozen restaurant kitchens, and in both cases a good digital thermometer is an essential tool. This one is easy to use and easy to read, and it has some nice convenience features that I haven't seen on other models. It's magnetic so it's easy to get hold of by attaching it to a refrigerator door, stainless steel or any other metal surface. In addition, it is thin and compact enough to be hidden in a rolled knife or in a backpack pocket. It turns on automatically when the probe is deployed and off when it's folded back, making it unlikely to accidentally turn on and drain the battery. The screen features a backlight for easy reading, as well as controls to calibrate the temperature, switch from Celsius to Fahrenheit, or hold the temperature on the display after removing the probe. I calibrated it in a glass of ice water when I first got it and it was already very close, within 1 degree of perfect calibration. There is a handy chart on the back of the thermometer showing the safe internal temperature for various types of meat and a battery is included but can be replaced with a CR2 button cell. The second extended probe is great for grilling or oven tempering and when connected only the reading from the detachable probe is shown on the screen. I took my old dial thermometer out of my knife case and replaced it with this, that's all I need and I'll get a lot of use out of it.
