
Forget all the separators that say they do better. This product from OXO uses the simplicity of science to quickly and accurately lift fat. How fast does it work? seconds! Within minutes of removing the turkey from the oven, I was able to pour the drips into the grease trap and then immediately pour the juice into the pot. Note that this is only two cups. So if you're collecting drips from a big bird, pour them into a larger container first - you'll likely end up with more than two cups, and who wants to waste good juices? ? And be sure to use a cork. This really keeps grease from going down the spout and prevents overflow. I've also used this to pre-separate the fat from the broth (from cooking the carcass). A big plus because I chilled the broth earlier and then scraped off the top layer. Helpful but time consuming. After using this separator, after cooling, the thinnest shell of fat remained. Since I was cooking a stew, it wasn't even worth the time to remove that tiny layer.
