Anyone who cuts a lot of vegetables and fruit will love this knife.

Nakiri bōchō means paring knife. The Shun Premier Nakiri Knife is ideal for slicing, slicing and shredding vegetables. It's light so your hands don't get tired, but it's so sharp that the knife goes through without much pressure. The first time I used a knife was to cut carrots. After the first cut I stopped right away because the knife snapped through so easily I thought the carrot was soft - the knife is SO SHARP! And there was no knife rattle that I usually felt when using my Lamson chef's knife. With this knife the cuts are very clean and straight. I can chop scallions quickly and accurately (compared to my Lamson and Zwilling JA Henckels knives, which take more than one stroke to cut completely and the knives usually leave my scallions soft). And now grinding is no longer a mess! I have also used a Wüsthof Nakiri knife and find the Shun Premier Nakiri far superior in beauty, weight, balance and sharpness.
