The best oyster knife

This is my favorite oyster knife ever! I have worked professionally in kitchens for 30 years and in the same oyster bar for 20 years. This is my personal knife. In fact, I can't even spit out oysters without them! I'm a medium height guy and the ergonomic pistol grip fits my hand perfectly. It's like an extension of my hand. I've used dozens of different knife models over the years, including the Boston, Galveston, New Haven, and Carolina models, and to me, at least, they all made me feel like I was fighting an oyster. At Shucker Paddy, I feel like I'm working with an oyster. This knife has a design that appears to change the pivot to open the sink with less effort. It has a slightly tapered tip to really get into the sink and a simple twist and it's open. There isn't a magic blade for every oyster, to magically open them you need to work on some of them. Most people who shell oysters (whether beginners or seasoned professionals) end up using the method of discarding particularly stubborn shells. It seems to be more common on 4" Bostons and New Havens. Either way, it's bad for the knife, and sooner or later you'll end up with a broken blade. This is a knife you just don't feel like buying. It seems natural to yourself turn over to open the shell and protect the precious oyster inside.It works with all types of oysters I have tried it on and in my restaurant where we get many different types of oysters this knife is particularly useful good for clams with a strong coral or limestone surface.These shells tend to crack, making the oyster hard to get.When this happens, wider bladed knives like Carolina's or New Haven's are almost useless, and Boston seems to have none very much to have good control.The Shucker Paddy gives you the ability to get inside the oyster and sever the abductor muscle with minimal damage to the oyster.And that is the whole point, right? Get this incredibly tasty shellfish out of the shell and into your stomach with the least amount of damage! All knives are personal. Some just feel better than others for whatever reason. There are a few people in my restaurant who prefer a different knife and like the Boston feel, for example. And if some people try this knife, they might feel the same way. It's okay, but in my experience 9 out of 10 people choose Paddy. This is a well-made knife that will take a lot of abuse, is economical, and most importantly, makes oyster shelling easier. All in all, in my opinion the best oyster knife on the market.
