Non-stick coating when pan is first heated
We were hesitant to switch to stainless steel pans but got tired of changing non-stick coatings every few years. Cleaning was our biggest concern, but it turns out you just need to make sure the pan is fully heated before you drizzle oil and add food. Here's a photo of the pan after our first cheese omelette. The eggs turned easily and the omelet came out clean. The frying pan was very easy to clean but it took a few bartenders to restore it to its original luster.
