it's a piece of shit. The pen is designed for a HUGE hand

Try the Christmas turkey. Compared to the old 1970's Hamilton Beach electric carving knife that died, this piece sucks. The handle is designed for a HUGE hand. Very difficult to keep still and slippery to the touch. And the power button is poorly designed and not in a good spot on the case. The knife itself leaves grooves on the meat. Not professional at all. You can see lines on all the cuts. And then you can actually swallow the meat without falling apart. Sometimes it just tears the flesh instead of cutting it. Not much. Also, I only carved half a bird (about 17 pounds) and the handle got hot very quickly. Either the handle is not insulated enough or the motor is working too hard to cut through a medium sized turkey. I love my vintage Hamilton Beach electric knife. Not these guys. Incidentally, this knife worked great for cutting foam rubber for reupholstery (although the blades bent a bit when cutting). So it will live in my workshop but will no longer be used for meat.
