I used this on 2 large, very fat London broilers. The meat was first seasoned, then poked vertically across the meat in one direction, then turned and poked horizontally. Then turn the meat over and do the same on the other side. I fried them on the grill and they turned out so tender and fragrant. I also used it for very thick chicken breasts. My chicken breast often comes out dry, but not this time - it was moist and tender. Very easy to use. Durable and well made. Easy to clean. I hand washed using a toothbrush with white vinegar and a little Dawn. Dead easy. I'm about to order a few more for Christmas gifts.
