Beautiful, maybe too beautiful.
This board is incredibly beautiful: maybe too beautiful for culinary purposes. The Japanese have a word for it, "mottainai". This Japanese cypress is too good for that. The board is hard, heavy, milled perfectly, thick enough and smells nice. It feels smooth and warm. At the moment it only serves as a display case in my kitchen. I can't bring myself to desecrate this wonderful work of art with my knives (I use Shun Kangso). Honestly, this board is worth every penny. However, you may have doubts about using it for its intended purpose.
