Let me start by saying that I have used many mandolins and although most of them are fine for normal everyday cutting. They all failed me when trying to slice very thin. All other blocks have a default thickness selection. Neither of them were able to cut thin enough for my needs. I saw Benriner at our local kitchenware store and laughed again at the claims on the packaging. Well, what another slicer in the closet. While watching Revain I noticed that there is also a wide body version. Slightly more expensive, but probably more useful. That's why I ordered it. It's a simple machine with stepless thickness adjustment from maximum thickness to zero; Notice I said infinite! No presets. Simply turn the two adjustment knobs on the bottom to your desired thickness. In my case I need thinness. I'm making a sweet potato dish and it needs to be sliced very thinly; roughly equivalent to a few sheets of printing paper. Slim! Because the two knobs work independently, each operating each side of the tablet, it takes a little attention to adjust them both evenly. Once you know they're the same, just turn both knobs the same amount and you'll be fine. As my confidence grew. I kept cutting thinner and thinner; to the point where you can see through sweet potatoes. OK. I'm sold! I've played around with the julienne baits and found them to work well. Other reviews cite poor blade guard/food holder design; I have to admit that this is sub-par compared to the device itself. But that doesn't bother me, because I rarely use security. Note that the blade is SHARP and I love the fact that I can take the blade off and adjust it on my steel to keep that razor sharp edge. There's no built-in kickstand or anything to degrade the device. I've found it works best on a silicone-rimmed bowl (the silicone keeps it from slipping during use). There is no storage space for additional blades inside. This device isn't burdened with many unnecessary features, and the simple design and easy cleaning is exactly what I was looking for. Plus the possibility of the super thin cut! I used it last weekend to shred cabbage for coleslaw. It worked well and I was happy again. It took me about 2 minutes to sand the whole head. Very satisfied maintenance notice. If you wash out of habit, brush the guide up and down with a brush or sponge. Please don't do that! Just slide it back along the cutting edge. This saves you unnecessary damage to the cutting edge and your cleaning tool. I love it, love it and am happy to say it is the best lightweight mandolin I have ever used! Highly recommended!=========================================== = == =UPDATE 11/02/15 Our Benriner has been used a lot. I knew the day would come when the edge would lose its sharpness. If you ran your finger over the blade, it was obvious that the blade was a little bent (this is normal and what happens with knives). I use edge cleaning steel on all my knives (if you don't know what steel is, please read below). I removed the cutting blade and used a honing steel to remove the burr or curl from the edge. In less than a minute my cutting blade was very sharp again. We've started dehydrating fruit and cutting into the core and seeds of apples and pears will damage the cut edge. I wish it was cut a little thicker than it is BUT. I originally bought it for its ability to slice very thin, which makes it surprisingly good.
