Grantons slide it through fat like it's not even there

I work as a meat cutter in a grocery store where we make a lot of precise cuts and this thing has made my job easier. The grantons allow it to slide through the grease as if it weren't there, and the blade and handle are the industry standard quality I've come to expect from Victorinox. With regular sharpening, it will stay sharp for quite a while even with daily use, and is soft enough that even sharpening with an oil stone is quick and easy, taking me no more than ten minutes to get it back to razor-like condition. Sharpness by blunting under heavy use.
