I'm a YouTube chef and have cooked many over the past 30 years. I was looking for professional nonstick cookware and realized that nonstick pots/pans were going to have a very short lifespan anyway. Personally, the ALL-Clad and Langostina professional pots/pans have always served me well and I've never had a problem with chopsticks. It needs to be learned and is pretty easy once you know how to use stainless steel. But some foods simply require a delicate touch, which is where nonstick cookware comes into play. I wanted to avoid the scraping, scraping, and digging that most cooks do with hard tools on this type of cookware, which can prematurely die off the nonstick coating. My research has confirmed the TRUTH! This is the one to buy. A non-stick material must be used. Designed for use with metal utensils and high oven temperatures. I strongly recommend NOT using metal utensils! Simply use plastic, nylon, and anything NON-METAL to further extend the life of these wonderful pans. Today: I've cooked two dozen dishes in the last week and I don't put them in the dishwasher or use sponges to clean them. All the chaos is simply erased. Here's the trick: After using it, but while it's still very warm (not hot), I use a damp paper towel to thoroughly wipe it inside and out. Towels with hot and cold water will help with tidying up. Then wipe again with dry paper towels and finally put a tablespoon of olive or vegetable oil on another paper towel and wring out the inside. Move. Let cool down. Remove, making sure there is no contact with other metal pans. I use flexible styrofoam wrapping sheet with paper towels in between. Never thought I'd have Caphalon after using All-Clad and Langostina, but this is the PRO ticket to using nonstick coatings. How the food is prepared. Absolutely great! The best omelettes, hash browns, seared steaks, sautΓ©ed pasta dishes. All at a lower temperature and all without burns and burns. Keep in mind that if you're using a non-stick coating, you'll need to lower the temperature. If I had one complaint it would be that the entire Pro range has to have the right glass lids for each size. I have 8", 10" and 12". Only 12" comes with cap. Good Appetite'.
