From a former chef at a 5 star resort in the Caribbean, these knives are very well made, balanced and really sharp.
Their sharpness will not dull away quickly either and I also appreciate and love the solid wood block. Well done!**Update** I skinned some salmon recently and the skin was taken off with ease and not too much effort or added strength on my part.
