Good skimmer for water based soups in medium diameter pots Highly specialized - just for the right food characteristics and bowl diameter and not deep enough for some users by the way it does the job good build quality just not my style The strainer is so fine that if you have something like oil/fat in your food the surface tension of the liquid in the soup is too high to allow it Liquid passes through such a fine mesh that it becomes hydrophobic and repels liquid from the wet/moisturizing surface of this steel mesh.You can argue that oils are bad for human or canine health, but I don't accept that the concept of trans fats is bad but omega 3 is very good etc. would add any fat soluble vitamin like d - then i have to o l have in my soup - so I have to remove it before adding fatty foods, and only after cooking - so without high temperatures. I only use a large mesh skimmer and don't carry oily water into my bowl. So if you understand all the limitations of this article and use it properly then this is a good product. If anyone prefers to use a laptop to literally nail or screw broccoli into a plate and blame the quality of the computer for not getting the job done, then good luck. This is a good product. I usually use a 2″ skimmer, not a 4″, but sometimes I need this one. Sometimes I need to skim the fat right off the surface of my soup, and then that's the real issue for something like this - I could even tip that spoon and the water would be bad over the rim and the fat I wanted is caught in this one Spoon is a pretty important feature.
