It saves you time and money. I have been brewing and fermenting beer for over 25 years. When I first started fermenting veggies I had the idea of using a three piece sluice similar to what is used in brewing. I had six jars with drilled lids for the lock and seal. The next time I went to Revain for more caps, this product was one of the recommendations they gave me. After reading the description and reviews I was still loyal to my Gateways but also interested. I bought a set of 3 to test them out. I find them to be much better than 3 section gateways. First, simplicity. With a 3-piece lid and airlock, you have 1 piece to clean and store instead of 4. I twist the lids off when I put the fermenter in the fridge, but you can leave the Easy Fermenter lid open if you want put it in the fridge. Even if you fill your glass too full (like I did with one of these) the brine will bubble up through a small hole in the silicone "airlock" which is easy to remove and clean - I've had beer foam and one Blow three pieces off one of the airlocks, and you'll need to clean each piece to prevent contamination of your next batch. Next is space saving. The Easy Fermenter 2 liter jar with lid is 24.5 cm high. The height of the same can with a three piece water seal is 13.5 inches (34.5 cm). With the Easy Fermenter, it's easy to pop the jar in the cupboard and get it out of the way while fermenting. Finally customer service. In the past few weeks I have received at least three emails from Gavin, a family member who owns this business, asking me to make sure everything is okay and that my questions are answered. He even replied to an email I sent later that day on Sunday. Yesterday I ordered 2 more sets (6 capsules). I don't throw away my other airlocks and lids, I only use them when my Easy Fermenter lids are already in use. This is a great product from a family business.
