I like different sizes as I can do multiple tasks and leave it on the board until I'm ready to add it to a recipe. I really appreciate the channel it has along the edge on one side to keep juices from spilling off the board. When I cut vegetables I don't have to worry about the juice, I can turn the board over and use the flat side. I've washed them in the dishwasher a few times and the black handles still look as fresh as when they arrived.
