My old Calphalon cookware is a bit dated. I had to discard a few parts due to surface wear and it was time for a change. I became aware of this set and was immediately intrigued by the fact that it doesn't require any special utensils and that it retains its finish as long as you don't use sharp objects. Of course I can't guarantee this as I've only had the set recently, but everything else in the new pots and pans is what I was looking for. The first thing I decided to check was the eggs in the little comb. Pan. The brochure that came with the cookware said it was non-stick, so I gave it a try. Close. It took some persuasion, but I got the balls out without breaking them. The next time I used this pan, I added some oil. With this small change, the pot was a joy to use. This makes the preparation of the omelet much easier. The next big challenge was Super Bowl weekend when I invited the whole family to stew. It was a simple test. I made two batches at once using the large pot from the previous set and a new one. The only thing I noticed - and did notice while using the sauté pan - is that this set takes longer to heat up than the old set. This is because this is thicker aluminum on all sides and it takes longer for all the metal to heat up. So the old pot was ready to run faster. But once the new one warmed up to the right temperature, there was no other obvious difference in its performance. When you make a stew and add dumplings, you know there's a twenty-minute window when you can't stir the contents of the pot. In some cases, this can cause food to burn and stick to the pan. When the food was ready cleaning was almost the same for both pots, but the new one in this set was easy to clean and didn't stick at all. So if I'm so happy with the new set, why four stars? Because the handles on the lids get hot. My old set had insulated grips. Of course, that meant you couldn't use them in the oven, where the new set can withstand up to (if I remember correctly) 450 degrees. This is important as I don't have to rely on cast iron monsters to move from stovetop to oven for some of my meals. And I can't wait to see how they work for "Dutch Oven" bread. white) no problem, I think you will be happy with it.
