Good table sharpener for regular maintenance of your best knives

Today I used this sharpener for the first time on some Wustoff chef's and paring knives that have become a bit dull over the years. The 3000 grit was just enough to restore the shaving sharpness to the hair on her arms. I haven't tried 10000 grit yet because it's much too high for these knives. I save it for the scalpels. The stones look just as good as the Japanese glass and ceramic stones I had which cost ten times more and break if you look at them the wrong way. These stones are quite thick. They adhere very well to the plastic mesh that goes into the base and I believe they will last the rest of my life before they become too flimsy to use. The whole block looks very well thought out. The base has drain holes to keep your counters clean and when you're done it just needs a quick drain and rinse. The plastic cap protects the stones when not in use and comes with an angled guide and small water bottle so you don't have to hang around the sink while sharpening. Note that the angle guide may or may not be appropriate for the particular knife you are using. I would suggest practicing on some older knives if you are new to hand sharpening as you cannot rely on this guide for all your knives unless you want to re-sharpen them all to their 20's -Adjust angle. The base is plastic, not bamboo as stated on the product page. That's not a minus for me. The plastic is quite durable, looks expensive and the non-slip rubber base is very impressive. No matter how hard I pressed the stone, it never slipped off my smooth tabletop. The only improvements I would suggest would be to add some sort of leveling stone and make some sort of cavity in the base to store the water bottle and guide rail. . My living quarters are cramped. I can't just leave most things lying around because the horizontal space isn't enough. Almost everything needs to be stored away and I am 100% sure that I will be hunting for these parts in a few months. Considering the price, this is not worth any stars. Most people who don't live in a shoe box like me have room for small parts. It won't restore long-abandoned and worn blades, but I would recommend this sharpening kit to anyone who wants to keep their best knives in tip-top shape and doesn't mind learning how to handle flat stones. It's pretty useful once you get the hang of it. Dollar for dollar, that's a hell of a price. It's way better than the idiot knife eaters sold everywhere and I expect they'll outlive me.
