Review on Suehiro CERAX CR 2800 Combination Sharpening by John Destruction

Soft, dirty and slow. Do not expect Cerax quality from this stone!

This stone (2800 Cr, both sides) is very dirty, very soft and quite slow to cut. The CR-3800 is sharply contrasted, more robust, less messy and cuts much faster. When you press the bevel on the cr-3800 it looks like a squid has inked your stone causing a lot of chips to come off but not on this stone. I took both Cerax Cr-2800 (280/1500) and Cr-3800 (1000/3000) combo stones after my 400/1000 sharp pebbles when I got serious about sharpening. The 280 side feels uncomfortably grainy, wears out extremely quickly, and your counter and knife are dripping in red, clay-like mud within 30 seconds. It easily forms deep grooves, such as deep grooves at the level of the relief, which can disappear at the end of sharpening because it wears out so quickly. When I got it I worked about 2-3 hours with a 1-2mm deep chipped and cracked handle and probably went 1/3 of the way to get it out before giving up, wearing down the stone 1-2mm and straightening it out out. long time. It can set the bevel, probably only on softer steel, and that's about it. The 1500 side is pretty much the same, tons of dirt very fast, gouging, fast wear and slow cutting. It took about 10-12 passes to raise the burr on both sides on a cheap stainless steel cleaver after a bevel was installed on the 280 side tonight. The rim was fine. My guess is that this Cr-2800 isn't a true Cerax formula and is most likely one of the older Surhiro stones, more like kingstones, although I suspect it's even softer. I think my Naniva Superstones are faster (400 and 2000.). Superstones are easy to measure and if my technique were at fault I would calibrate or score them or any of my other stones, but I don't. What can it be useful for? Knives, plates, notches and grooves too easily. Maybe wide beveled knives would look good out of all that dirt? but you will want to pair it with a good cow stone if you have really dull or damaged knives. The sk-11 150/600 diamond plate is a great option that can also flatten, chip and re-profile your Cerax combo stones with ease. Otherwise you might be looking at King 300, Imanishi 220 or 400 or Cerax 320 but I have no experience with these stones. I've been sharpening for about 6 months, probably 50 sharpenings. If my mind changes I will update but I don't expect to.
