Review on ๐Ÿ”ช Miyabi 8-Inch Chef's Knife with Birch Handle - High-Quality Stainless Steel Blade by Anne Wilson

Revainrating 5 out of 5

The best knife I've ever used.

Absolutely incredible knife, you get what you pay for. I've been a professional chef for five years and have tried many different knives in that time. They all have their merits, for thirty bucks you can get a decent chef's knife that will take you far into the world of cooking. However, once you've researched different types of steel, different handles, and brand reputation, you're more likely to go for something like this. I think we all know Myabi's main competitor with Junn rhymes and they also make good knives, I used them. However, in my opinion, this knife, although similar to its counterpart, is far superior to it. Much lighter, much higher quality steel (study SG2 vs. VG-10) and 101 layers of steel to make this knife. Mabi knows what he's doing. This is a beautiful blade, I would only choose it for the properties of the steel but let's be honest the damascus pattern is amazing. At the same time I bought a teak cutting board and the pair is really great. The handle is unfinished, I rubbed it with mineral oil on arrival and it was shiny. learn to care for a knife as good as it is. Get a water stone and learn how to use it, for this knife I recommend either 1000/6000 grit or 3000/8000 grit. DO NOT attack this knife with diamond steel or electric wheel and complain that you can't get the blade. Whenever someone with a good blade does it, the kitchen angel bursts into flames. My next step is an alignment that gets him to where he's going to cut the phone book paper without holding it in his hand, but simply folding it so that it lies on the cutting board with a straight downward motion. Obviously such sharp knives will slice through anything you place, including the fingertips of beginners. Honestly, probably not the best "My first job in the kitchen" gift, but for those who love to cook, this is something special. - Mario B
