Something about this knife is strange.

I wanted to order a backup for my Miyabi which I bought from Zwilling. When the knives arrived and I opened it up, I realized something was wrong. I can not say that this is a copy, but the weight is not the same, there is no balance. The handle is thicker and looks like wood. strange. First, with the right weight, the metal doesn't feel right. I'm sending it back and buying another one right away.

A matter of speed and beauty.

Light, nimble, stunningly beautiful. The best knife I've ever had. It's so beautiful that 6 months after I bought it, I still sometimes take it out of the box just to look at it. The only reason I didn't give it 5 stars is because its beauty is ruined but the specs are printed on the left side of the blade (see image). I have no idea why they went to so much trouble to make a visually stunning knife just to have a technical manual printed on the side.

just like a good sharp knife

I have had this knife for 2 years now. We use this for everything around my house from slicing meat, turkey, slicing veggies and even the occasional slicing of the birthday cake. I'm by no means a chef, I just love a good sharp knife. The only thing I've ever done with it in terms of maintenance was hand wash it and run it over the honing bar. Still as sharp as it gets and looks like it came straight out of the box. Would buy it again anytime if things got bad

Miyabi Birchwood 8 inch Unpacking and first use!

I'm a professional chef and I've had hundreds of knives. This is the sharpest, most stylish and highest quality knife I have ever owned. This is JA Henckels Seki Japanese factory, they don't mess around, this is the best Japanese knife on the market in this price range. Not for beginners, this knife is razor sharp and requires some skill to maintain the blade and some special items. Superb knife goes with chef knives

I'm by no means a professional chef (even the term "amateur" is probably used incorrectly), but I've taken several cooking classes (including knife skills). Class 101) and felt I had a good knowledge of the different brands and styles of knives to reap the benefits of a quality chef's knife. Absolutely incredible knife, you get what you pay for. I've been a professional chef for five years and have tried many different knives in that time. They all have their merits, for thirty bucks you can get a decent chef's knife that will take you far into the world of cooking.
