Superb knife goes with chef knives

I'm by no means a professional chef (even the term "amateur" is probably used incorrectly), but I've taken several cooking classes (including knife skills). Class 101) and felt I had a good knowledge of the different brands and styles of knives to reap the benefits of a quality chef's knife. I will eventually replace all of my kitchen knives, but the chef's knife is the workhorse of the kitchen, so that's where I started. This Miyabi chef's knife definitely ticked all the boxes, and the birch wood handle with a multi-layer (Damascus style) SG2 microcarbide powder steel blade was just beautiful. everything he touches. I have cut meat and vegetables several times with this knife and it has to be the lightest knife I have ever used. The handle is incredibly comfortable and the weight is very well balanced, making it easy to cut. The packaging that the Miyabi knife came in was also very well made and what you would expect from a knife in this price range. I didn't cut the knife myself, but it's not exactly what you need for a chef's knife anyway. Also, I'm a bit concerned that the handle will stain more easily than other knives I own since it's a lightweight natural wood material. As a result, I try not to put this knife on a dirty cutting board where I have blood from cutting red meat or other residue that might contaminate the handle. Overall this is an excellent knife and well worth the higher price tag, but it should only be an investment if you know how to use knives and take special care of them. If you're likely to just throw your knives in the dishwasher when you're done with them, then this knife isn't for you.
