Miyabi Birchwood 8 inch Unpacking and first use!

I'm a professional chef and I've had hundreds of knives. This is the sharpest, most stylish and highest quality knife I have ever owned. This is JA Henckels Seki Japanese factory, they don't mess around, this is the best Japanese knife on the market in this price range. Not for beginners, this knife is razor sharp and requires some skill to maintain the blade and some special items. I would not recommend using steel for sharpening as it is a very thin, hard edge that can chip. Instead, use a leather belt or stone that is 6000 grit or higher!
