
I'm new to cast iron frying. I've been cooking for over 30 years but I didn't grow up with cast iron so I never learned how to use it. I've always used triple stainless steel and some Kalfalon nonstick. Because of this, I didn't like the idea of not washing the dishes and was afraid that it would remain seasoned. But there are plenty of recipes that recommend cast iron, and I finally decided to take the plunge. So when I got my cast iron skillet. I was happy and angry at the same time. Cooking was easier and cleaning wasn't as bad as feared. But the fat splatters were MUCH worse than I expected and had me looking for a solution almost immediately. I almost ordered a mesh topper but saw that and read some reviews and decided to give it a try. I love it. It may look silly, but it totally works and even adds versatility to the pan. It's pricey, and I didn't like the way things turned out with my jump into the cast iron kitchen, but it was worth it. Didn't have time to comment on durability but for the money I hope it will hold up. Washing hands is tedious, but washing dishes is easy.
