Perfect Little Pops

I am disabled and dealing with bones merging in my hands. This makes me move slower and a little clumsily. But I can't stop cooking and baking! I live in a very hot area, I saw it and decided it's time to cook up some cool treats for myself. When they arrived I took a look at what I had on hand. I decided to do neopolitan pop. The vanilla base was first whipped with cream, plain Greek yogurt, almond milk and vanilla. Then I took out two servings; I added sugar free strawberry jelly to one to taste and added this phenomenal cocoa I just found to the other. Each batch had a bit of powdered sugar as well as a pinch of salt. I beat each flavor for at least 2 minutes to make sure there are no lumps or unmixed specks. I froze them overnight and when I went to taste the fizzy drinks I let them sit for a minute before removing them from the box. SO GOOD. A tip: If you want to avoid ice crystals, add 1 teaspoon of Xanthan Gum or 1 tablespoon of vodka for every 3 cups of liquid.
