This year I decided to serve small desserts at our annual Christmas party. I cook all the food and it's hard. That's why I wanted to turn the desserts into small "bites" so that our guests can also enjoy the sweet after the savory. Best idea! I made mini cheesecakes with cranberries. I bought 2 of these pans and it was so easy! Although they don't stick, I still use Pam to make removing the cheesecakes easier. They hand wash beautifully and I keep retractable bottoms in a little ziplock in pans so I don't lose them in my baking chamber. I've also used them for mini chili ancho tarts. Ideal!
