These versatile Touch Series knives are great to use and comfortable to hold. They are more modeled after the Japanese petty/pettine knife than the more western utility knife. The wider profile makes it easier to prepare ingredients, remove meat or do other delicate jobs. It is very sharp and can be sharpened like a razor blade. But stainless steel is pretty rustproof. Not corrosion resistant and a bit soft. Put it on a bone and the blade will break easily. These Touch knives are recreations of the excellent Shun knife line with a similar appearance. If higher quality stainless steel had been used they would have earned 5 stars. What a great affordable set of modern knives they could be. The ergonomics are great.
