I'm making a collection.

Pappardelli Cutter: The pasta is wider than I expected, but it's my fault for not looking at the width of the 50mm (nearly 2 inch) pasta. great narrow noodles for lasagne and very easy to cut. This is a really good size for "cake noodles". And of course pappardelle. the knives cut into it, and this groove can collect the "dough scraps"; On the other hand, a stainless steel roller is likely to cause cutting tools to become dull. (plus just one touch) otherwise you won't get ripped edges on either side of all three noodles. Pros: It's an Atlas and of course a perfect match for the Atlas 150. Turns easily and cuts accurately. The construction is solid and precise as you would expect from the Marcato Atlas line. If you want to save pasta! then this is probably not the route you want to go unless you buy a lot of dry pappardelle. If you want really tasty pasta or complete control over the ingredients, then this is what you need. Need an egg pasta recipe? Use equal parts soft flour, semolina flour, and whole egg. Mix and roll into a ball. Here it is - egg noodles. Don't have any semolina? Two parts soft flour (White Lilly AP) and one part of a whole egg will do. Reginette Cutter: My new favorite pasta shape. I slice it long (over 12 inches) on speed 6. The ribbed edges hold the sauce great and the 12mm width is perfect for mufalde and deconstructed lasagne in a bowl. Being an Atlas, it fits my car perfectly and cleans the brushes in no time. Lasagna knife: 10 mm non-serrated pasta. Much wider than fettuccine but narrower than reginette. Ideal for chicken and pasta. The cutter also makes excellent eggless noodles and only cuts on setting 4 or 5. I find it perfect for thicker noodles and noodles. This is a great addition to my pasta rotation. Biggest downside: It has plastic pasta dividers that need to be removed and cleaned. Some of my pasta didn't cut all the way through. Biggest plus: It's an Atlas with the quality and fit you expect. Mafaldine Cutter: Finally got this cutter after sending two back with the wrong markings. I live it! Wider than Trenette but narrower than Reginette - a fantastic addition to my collection. Makes great lasagna noodles in a bowl (think commercial cans) with nice scalloped edges. Trenett Cutter: This is very similar to other tape snips with smooth edges. It's 3.5mm thick, somewhere between linguine and fettuccine, and it does a great job with alfredo pasta. I had no trouble cutting it evenly or cleaning it afterwards. It will definitely move into the pasta rotation and probably take the place where my fettuccine knife used to be.
