design flaw? Kitchen Utensils and Gadgets

The unit I received has a nylon locking wheel (all my other Atlas Marcato knives are stainless steel). The stainless steel cutting roller cuts into the nylon roller, leaving small pieces of nylon in the noodles. The device is unusable. I haven't tried it for a while after purchasing it and the return window is closed. There were no instructions for my device and I cannot find any instructions online. I wonder if I'm doing something wrong? Does somebody know? I opened it but there is no setting.

Pros
  • Great design
Cons
  • too dull

Doesn't even deserve one star

I have owned pasta machines and accessories since 1978 and these accessories appear to be of very poor quality. The roller systems of all pasta machine attachments that I know of work on the basis of a drive roller and a cutting roller. These two reels should work in harmony. There, the drive roller engages in the cutting roller via internal teeth on the side opposite the handle and drives the axis of the cutting roller. The gear mesh on mine failed on first use, there doesn't seem to be much…

Mama's Ravioli Cooking Secrets!

I saw mixed reviews for this product. So I wanted to share my experience, hoping that someone else with no natural culinary skills like me can learn how to make ravioli like a pro too! The homemade ravioli are worth it! After a dozen eggs and a bit of trial and error, my keys to success are: 1) Place the filling in a food processor and finely chop. The voluminous filling prevents the ravioli from closing up. Catastrophe! 2) Only thin the batter to setting 4. The book says 5 or 6. Wrong…

Beware! Cheap PLASTIC Gears - UPDATE (see photo)

The second time I used a Linguine pasta knife, the handle started to slip while cutting. Luckily, I'm usually done with just a few games left. In the end, the handle just turned useless. The side of the device can be opened quite easily with a crosshead. When I removed the side cover, I found that the white plastic gear had completely gnawed through the matching gray plastic gear. Now I've just used it to cut regular pasta, nothing out of the ordinary or particularly chewy. I'm pretty stunned…

I'm making a collection.

Pappardelli Cutter: The pasta is wider than I expected, but it's my fault for not looking at the width of the 50mm (nearly 2 inch) pasta. great narrow noodles for lasagne and very easy to cut. This is a really good size for "cake noodles". And of course pappardelle. the knives cut into it, and this groove can collect the "dough scraps"; On the other hand, a stainless steel roller is likely to cause cutting tools to become dull. (plus just one touch) otherwise you won't get ripped edges on…

Pros
  • Don't waste too much time
Cons
