Review on Viking Professional Cutlery Paring Knife by Melissa Lopez

I cook for our family almost every night and last year I started investing in good knives. I have mainly worked with Japanese brands of non-ceramic but very high quality knives and decided to give this Viking brand a chance. The blade feels nice and is very comfortable to use. As to be expected from a knife of this quality, it is very sharp. It will fade somewhat over time, but the knife sharpener quickly restores it to excellent cutting quality. I don't wash my good knives in the dishwasher - always by hand, which doesn't take too long. I really like how they cut. It's smooth, precise and well balanced for easy cleaning. Overall very satisfied and comparable to my even more expensive Japanese knives.
