Healthy but Bulky - Light fluffy cakes

Bought mine at a fancy French store because it was the only one that stocked it. Even though I've watched videos online showing how it works, I still found it a little different than what I expected. There are lots of benefits as well as problems of using this item. One of the first things I made was soft brown butter cookies (with puffed quinoa). Problems: As soon as you turn on the sieve, it pours out the flour very slowly at speed 2. If you have 2-4 cups of flour in a bowl, it takes a while. And if you're trying to avoid a chewy cake or biscuit, that's a problem because the longer your product is mixed, the more gluten is produced, creating a chewy texture. However, if you speed up the sifter, the flour will cause a puff of smoke (similar to adding powdered sugar to a mixer running too fast) as the beater rotates at the same time as the sifting. a few pieces to collect every time you use it. If you avoid recipes with weights, here's your chance to try them. This block is more suitable for small recipes than large ones, as the sifting must be done slowly to avoid a puff of smoke from the flour. The scale can be used without a blender as it is battery powered. The machine itself can hold about 600g of flour, which works out to about 4 3/4 cups (if you don't use a lid, which I didn't think was necessary). The strainer bowl can both be pulled back and rotated in any direction so you can sift directly into the bowl blender or sift into another bowl. Overall, if you like gadgets, I think the pros outweigh the cons as they can save some time by weighing and sifting at the same time. And it also makes your cakes lighter and fluffier when I've used it with small cakes. However, since it's cumbersome, it can add extra steps to your process.
