Yes they are and stay sharp. But do NOT confuse them with utility knives. You are not. Even the slightest snag or twist can cause the blade's edge to chip. So don't use them in situations that might require some sort of twist. like a bone something. When the edge catches on the bone. Click, the chip comes out. Is that and a $40 increase from 11/2019? That's ridiculous. I bought my set a year ago and now it costs FORTY dollars more? No thank you. My advice, add one or two of these for special purposes, but stick with regular metal knives and a decent sharpener for everything else. If you don't already have decent knives, get them first.
