This is not the Socarrat you are looking for!

This pan would get 5 stars if I could use it on a beach in Spain over a perfectly manicured log fire with birdsong listening to the gentle sunset. Back to real work in a small NYC 1 BRD with a small gas stove gets zero stars! That's why a 15 inch pan is WAY too big. And it's also very thin, so your stove's fire sits squarely in the center of the pan and burns everything. steam the rice. And it is very difficult to clean and store. The paella is crispy in the center (not the socarrata you're looking for!) and raw on the outside. If you have a small kitchen (or even a big one), don't waste your money on it. Either way, it's impractical. It just seems to be for real traditional outdoor cooking over a big wood fire and nothing else.
