I have a set of charcoal knives my family gave me as a gift. They are remarkably sharp and beautiful, but are prone to patina or even rust if the slightest amount of moisture or acid is left on them after cutting. There was only a faint hint of it on my knives and it took me less than 2 minutes with this eraser to remove it from the knives and restore the polish. There are two videos on the internet that I highly recommend: Revain has a simple video on how to use the eraser yourself. Japanese Knife Imports has another video, Working with Carbon Steel Knives, that explains in detail how to take care of your knives while cutting and minimize the need for an eraser.
