Very useful to have a pan that spans multiple gas burners and allows you to cook 3-4 portions at a time. We have prepared breakfast and dinner for +3 servings. When all portions are prepared, the chef can eat with us without having to switch between the next dishes until everything is ready. Hold two gas burners alike for even heat and a flat pan. Cleaning this pan is quick and dry. Aluminum is 1/2 lighter than cast iron, so it's a good choice for ease of handling. It was a great purchase.

We were looking for a replacement for our kitchen skillet and came across the Analon Skillet from Cooks Illustrated. I was very happy with this product. It's a lot lighter than our previous steel pan and the non-stick surface works pretty well. The surface heats up very evenly, there are no problems with cold or shock. We have this pan for our stupid glass stove. I say stupid because we hate the stove - it seems like it takes forever to boil a cup of water! Anyway - we did this on purpose because people commented that it's a flat bottom (which makes for better heat with a glass lid). And that's true, but there's a very slight bend that causes the center of the pan to protrude slightly above the glass surface. UPDATE: Bought a second one hoping for better results. no It was deformed right out of the box. I measured the flatness of the bottom with a ruler and there was at least a 1/8 inch gap down the center not making contact with the glass burner. I'm done with this product.
