The Folding Proofer offers home cooks the benefits of a commercial kitchen tool - accurate temperature and predictable results - in an elegant appliance that folds for storage. The temperature and humidity control is perfect for rising and fermenting yeast bread dough or sourdough. In slow cooker mode, enjoy delicious one-pot meals using your own favorite Dutch oven or pot. Great for making yogurt, sous vide, tempering chocolate, and a wide variety of probiotic superfoods including soft cheeses, cultured butter, kombucha, tempeh, and kefir. Radiant heating warms food to the temperature setting. Proofer mode 70-120F (21-49C) with optional humidity. Slow Cook mode 85-195F (30-90C). (NOTE: inside air temperature may be different than the set temperature). Folds flat for storage. Touch a button to switch between Slow Cook and Proofer modes. I have had excellent results with this accessory

I have had excellent results with this accessory. Placing it in an enclosed area like a pantry will give the best results. I have read some of the negative comments so I can understand their complaints. This is a very weak apparatus, causing the inability to maintain a narrow zone of temperature differences. Placing the proofer in line with the forced-ventilation oven/air conditioner results in large fluctuations in internal temperature. The assembly, although quite simple, is fraught with…

The perfect addition to the bakery kitchen!

For so many years I have looked at this product and thought it would be a good addition to my culinary needs. I bake a lot of bread, and although my oven has a proofing mode, when I'm making an appetizer (be it a culture or a biscuit), it often needs to be proofed for up to 12 hours. I don't like the idea of leaving the gas stove on for so long or overnight, even on a low setting. That's the reason I finally decided to buy this one. I'm so glad I did. I bought this proofer to bake sourdough bread. I needed a way to control the fermentation temperature. As someone who has used commercial proofers and commercial incubators professionally, I was very surprised at the discrepancy between the (too high) price of this proofer and the (generally poor) quality and durability. This gives me such a boost!

Opinions are mixed here on how the temperature control works. I had my apprehensions and doubts, so I bought a probe thermometer and tested it. Test Method: I had a bowl of water that was 90 degrees. The temperature in the kitchen was in the 70s but fluctuated slightly during the test. The probe was placed in water without touching the bowl and the bowl was placed on the grate, then the lid was closed and the thermostat set at 90. When opening the bowl, the temperature of the water dropped to 5
