Dexter-Russell make the BEST Chinese chef's knives. I know I'm Chinese and we've been using these Dexter Russell knives for decades.

I love this knife. I lost mine and this is a replacement. I've had another for 40 years. Never sharpened it. Be careful, very sharp. Came in a box, scratched.

I liked the knife but the only reason it got a 3 was because it had a chip in the corner. I would give five stars. It was razor sharp, just disappointing that a brand new damaged blade was delivered.

This is exactly what I wanted to replace my traditional chef's knife with. You can feel and see that the quality, weight and balance make the job easier, I daresay you will have more fun chopping vegetables.

I'm pretty picky when it comes to kitchen cutlery and this is my new go-to for all things dicing, chopping and thin slicing. It's razor sharp and the curve is just right for grinding veggies into rice or ground beef. NOTE: This is not a meat cleaver and should not be used for cleaving between bones or chopping large pieces other than meat.

I have used chef's knives from this brand before. They are high quality and polished to a high gloss. The knife comes in a plastic box with an easy-to-open tab. The tamper evident tab has been taped and shows clear signs of being opened and reseals. The knife has scratches on both sides of the knife. It's a shame to pay a higher price for a used item.

Superb knife for cutting meat and vegetables. It turned out to be razor sharp, but don't use this knife to cut bones! The blade itself is balanced and the wooden handle feels good in the hand. My only issues are that the packaging was easy to open (mine was damaged), the knife had a few scratches on both sides, and you need a separate sheath or storage unit for the knife when not in use.

I have no doubt this is a great knife for many people. Unfortunately, I'm not one of them. I find the weight of the blade awkward to control and tiring to use for long periods of time. It slices, slices, and dices well, but no better than my French chef's knife or santoku. If I had used this type of knife earlier in my culinary life, I might have felt more comfortable with it.
