Sturdy rustic-style knife

Not exactly a knife to look good with. This is a working knife. Reliable, simple and productive. It has it where it counts and rustic charm. The smaller size is great for cleaning fish!

I received the wrong item, I wanted a curved skinny

I received the wrong item (I wanted a curved skinning knife but got a fishing knife with a clip). It's so well made I can't complain. The quality is wonderful. It really is from another generation.

Pros
  • Excellent construction
Cons
  • Not the best

High carbon steel that will accept and hold a sharp edge.

This is an old design that is over a hundred years old. He can do anything he needs to do, and even something. Wooden handle, carbon steel blade. There is no bowl. There is no problem making a terribly sharp edge on this blade.

Pros
  • Absolutely amazing!
Cons
  • Modern

Sharp, thin handle and no sheath

My son likes it. Everything except that the product description clearly states that the scabbard comes with the purchase. It is not. The blade's unique shape requires a matching scabbard, but there isn't one. You have to do one, but not the most popular thing. The knife is a good skinner and pairs well with other processing tools.

Pros
  • Feels good
Cons
  • So-so

Exactly what I wanted but fits well Chef's knife

This was my almost complete knife set with a few more left. Excellent steel and handle, but the blade sharpening is not satisfactory. There were flat areas along the radius and the angle wasn't sharp enough. Making a knife that would need to be re-sharpened to get the right cut. The angles on the handle were also a bit sharp, making the knife uncomfortable to use for long periods of time (although sandpaper won't fix anything). half an inch from the top (I'll take care of that too).

Pros
  • Large selection
Cons
  • Neutral

Perch Fillet: Cutlery and Knife Accessories

After watching Captain Russo's YouTube video on how to fillet a perch, I grabbed this one. After a good sharpening (it's not as sharp as delivered) I tested it on a big red. It works much better than thin fillet knives. You can put your finger on the edge and use the curved part of the knife to do the job much more precisely and easily. It's so good I gave it to my fishing buddy. As another reviewer mentioned, the knife isn't stainless steel, so be sure to dry it after washing - no big deal. I…

Remarkably well done. for cutlery and knife accessories

This is a replacement for a different style of old hickory handle knives. Fit and finish exceeded all expectations. The steel quality is very good. The blade has been evenly polished, ground and honed with pride and care. The grips were ground very well, although one side was slightly thicker. The landing was flawless. There are no ridges or indentations on the pins on the handles (plates), they are almost so smooth that you can hardly feel them when you run your finger over the handles. Edge…

5 " Dexter-Russell Skinning Knife

This 5" Dexter-Russell Skinning Knife is ideal for butchering deer, small game, speckled trout or red drum. . Keep it sharp and just let it do its job with a little pressure or effort. Much better than a fillet knife as it's the right size for working with fish, the size you keep for eating. Slide it along the ribs and the fillet becomes so light compared to a filleting knife. The only flaw I can find is the finish on the blade and the handle is unfinished but needs some handle lube. Mineral…

The blade does not have a good edge

This is a classic butcher knife with a carbon steel blade and full shaft. The handle is raw wood (something with large pores. Maybe beech?) and is attached with three brass rivets. The shank is 1/4" thick and the blade itself is about 3/16" long along the shank, tapering straight down to the cutting edge. The blade is almost completely stiff and heavily curved as you can see in the picture. The blade is short enough to be maneuverable in tight spaces, and the curvature lets you cut by simply…
