These knives were perfect. A little resharpening was required. I bought these for my butcher friend and he loves them. Been using it every day for about a month with no problems.

Quarters and two cow elks processed - they hold the blade well and sharpen without problems. Great for slicing steaks, removing silver skin and removing mixed meats for burgers! I would do it again but it's not necessary because they won't have any trouble keeping the edge for a long time.

I was delighted to find this set as a gift - And although the quality of the knives matched the description they sent me the wrong set. Not once, but twice. In the description there are 3 different knives in a "set". One of the shipments had 3 identical boning knives, the next shipment (which at least shipped on time) had 3 identical trimming knives. I returned the first order but due to the deadlines I had to leave the second order and an addendum from another company for Christmas.

To the people packing these please check your work, it could be a lot worse for the next person who orders this set. It would be five stars if it was flawless delivery. :/
