Great knife at an incredible price.

I'm no cook, not a chef, not even a home cooking enthusiast. I just like good quality that lasts and this knife is fantastic. It's sharp, feels good in my hand, and helps me cook chicken faster than ever. I recommend this knife to anyone looking for a quality knife that will last!

Excellent value for money Cutlery and knife accessories

I don't pretend to be an expert on knives. but for the price of a knife it is excellent for slicing meat, trimming roasts, brisket etc. So far it has retained its sharpness despite not being used on a daily basis. Instantly as sharp as a knife five times more expensive. Would buy again simply because it's a great price - gosh buy 5 of these and I'll have a sharp, useful knife for years to come. The only downside I have is that it doesn't come with a scabbard/sheath.

Lightweight but works great

Easy to use, super sharp, easy to clean in the dishwasher with no stains or rusting after a few months. The handle is comfortable to hold and the knife is very light, making it easy to adjust cuts. It feels "agile" when guided. The only improvement I would like is a slightly heavier handle to soften the dexterity a bit and give it a little better balance. All in all a great knife that gives me a lot of pleasure in the kitchen.

Not for full breasts

Does not hold a rim. First I had to remove the factory bevel and grind it to 5000 grit on the Shapton. Got razor sharp. But it doesn't work well on the chest. Lost about 25% of the way and became a bit dangerous to use. The work went on, but badly, and I had to be very careful while working. Not as flexible, so it doesn't work well with the top layers of fat. I'll keep it as a cheap knife and try the Victorionox brand some more.

Surprised the price isn't three times the price

This is the third chef's knife I own, but I've used it many times as a chef in restaurants. This is really great for the price. The handle feels good in your hand and the blade is razor sharp! How to be super careful sharp. I have been using this knife several times a day for cutting meat and vegetables for 4 months and have not sharpened it once. That's crazy, isn't it? It's still very sharp, not exactly new, but it still does the job! I will definitely buy the Mercer brand again.

Another great knife from Mercer

Many years ago I was introduced to Mercer knives by a teacher who gave cooking classes. I asked what good knife wouldn't break the bank and she said she recommends Mercer knives to all her new students. I bought my first one for about $22 and it has worked for years and has one major benefit. Now I have much more expensive knives and Mercer is still used just as often. This one is no different.
