I was skeptical as several comments said the dough was sticky and a mess. Not true. I just did 250 and it's amazing. If your dough sticks, then it's too wet. I floured very well and then didn't flour at all, except for the dough when rolling. My dough didn't stick to it at all. No flour bowl required. My wife and I own a successful dumpling business and have been using these presses for 3 years now. With these presses, we produce an average of 60 to 100 dozen dumplings per day (we line them up and roll them out two dozen at a time). They work great. We sprinkle and flour the shells every third or fourth pass to keep them from sticking. We just replaced two cracked trays three years ago. The only reason I didn't give that 5 stars is because they are made of lightweight aluminum and can crack.

Was a little hesitant after reading the reviews, but still decided to try. Tried the next day. Worked fantastic! Uses our family recipes for dough and potatoes. I made about 35 dumplings and none opened up while cooking. I only gave it 4 stars because the packaging said the press is stainless steel.
