Cannot calibrate with guidance

Does anyone see what I see? I need to calibrate this to zero. There is no zero. I come back. Whether it is accurate and calibrated I cannot say.

The instructions that came in the box is for a different type, it doesn't work for the type I received. one for honey. if anyone can help please thank you
