Forged and hammered with 16 layers of steel in the Damascus tradition with a VG-10 Core, the VG-10 Hammered Damascus Series has been a perennial best seller, combining performance, beauty, and extraordinary value. Sometimes called a Peeling knife, the Paring knife resembles a small chef's knife and has a medium sized blade that can maneuver through both small and big jobs. A razor sharp Paring knife can intricately carve and style vegetables and fruits for beautiful presentations and garnishes, performing just as well for bigger jobs such as preparing meals. Proudly made in Japan. This knife is complimented with a premium Western Style Handle that extends to the full tang of the knife and ergonomically welds to the hand for seamless use. The hammered texture of the blade eliminates friction and keeps food from sticking to the blade. Every knife from Yoshihiro is handcrafted by master artisans creating a unique one-of-a-kind work of art. Traditional Japanese knife making values a sharp edge, which requires attention and care. Attention: Single grind

I didn't see (and see) nothing about it in the description, but the blade is single grind, ie only ground on one side and intended for right-handed use. This gives the utility knife much less actual utility. Personally, I would have preferred the double bevel for the jobs I was hoping this knife would do, so I hardly ever used it. I hope they edit the description if not the name of the knife itself so no one else gets the nasty surprise I got.

I am impressed. best in kitchen and dining room

Vg10 (Damascus) laminated blade. Now the photo does not convey the beauty of this knife. This is a work of art. So incredibly easy. When you look at this knife, you might think it's going to be heavy, but that's nowhere near what we need. Can't wait to use and update it. The sharpness makes me angry because I like sharpening knives. This is therapy for me, and this knife is so sharp I couldn't in good conscience cut my rocks with it. Great knife in the kitchen and dining room

Very nice knife and looks very cool. It has a Western handle rather than a Japanese one, which is something I like about a knife this small. It comes out pretty sharp, not as sharp as my Mayabi Shun Mcusta or Yaxells, but after about 10 minutes and using a couple of Yoshihiro sharpeners I've leveled it with my higher quality knives. I use this knife a lot because it's my only small pair of knives, my other 5 inch knives, it cuts the easiest because I have it so sharp, but because it's so small…

Very happy with this knife.

I am so picky about cutlery that it took me several months to finally settle on this pair of knives and the chef's knife to match. This twin knife looks fantastic and is very sharp. The processing of handle and blade is perfect. There are no protruding defects along the shank or rivets. The wooden handle feels solid and feels good in the hand, making it easier to work with the details. Great knife with small flaws

Great little knife starting with 5 stars because I can see the quality of this knife and it deserves 5 stars. Although the standard knife was sharp enough for a shave, it didn't have a very well polished edge, at least compared to my Shun knives, this knife actually felt a bit dull compared to Shun's factory blade. I take a few hits on a 12,000 grit rock and it's up. It also became clear that a 50/50 advantage is accompanied by a 70/30 advantage when used with the right hand. Neither of these…
