Handles are more comfortable now - used to have smooth rounded corners

Handles as before with hard/non-smooth edges. I think one day I'll sand them down to make them more comfortable in my hand. Also, they don't make a 6 inch chef's knife, which I find to be the most comfortable and user-friendly of any kitchen knife I've ever owned. I had a 6 inch knife from the 1970's until recently when it broke. Chicago has a lifetime warranty, but they don't have a replacement for the 6" - they sent the 8".

  • It was a pleasure

  • Almost everything is ok

This steel puts the lead in your pencil

All my knives stay sharp. I've used V-shaped (ceramic) stones in a variety of ways, various clip-on guide stones, and most recently the EdgeSelect 120 Plus motorized sharpener. Edge Select is the easiest way to produce the best blade, but this steel adds that last ounce of sharpness to a freshly sharpened and used knife. It replaces my leather strap (with chrome oxide paste) as a re-sharpening. Well made and seems to fall in the sweet spot of the market in terms of price and quality (you can…

Great blades, true to size and a bit rough

Got these as a housewarming gift for a friend of mine who knew what I was getting into and wanted to improve on what I was getting. For the price, the blades themselves are great for the kitchen and those who cook every day. The handles require some work to finish though, they are quite rough and the tang (the piece of metal sandwiched between the walnut handle) is proud of the wood and rough in relation to the palm and fingers. Knowing this I carefully filed and sanded the wood to a very high…

Premium Sharpening Steel

This is the first time I have bought or used any sharpening tool. To be honest, I never understood the value of this tool until recently. I decided to buy this item in addition to a new set of knives and wanted the knives to last a long time. My knives used to get dull (due to poor quality and not sharpening) but after using this tool I wish I had known sooner. I watched a few videos on YouTube to get the technique right and it's been a breeze ever since. My knives keep their sharp edges and…

Great knives! The last in years!

I bought these knives as a Christmas present for my brother a few years ago. They come in very pretty packaging, which makes a great gift. Out of the box they are very sharp and look very nice. They are very well balanced and look great in the kitchen. Now that a few years have passed my brother has had no issues with these knives and they are still in great condition. My brother doesn't take much care of his stuff either, so these knives have to be extremely durable to take a beating, I'm sure
