I have just used white plastic stoppers for the first time. I have used pocket hole joinery for the last 5 years on personal projects. I would classify myself as a medium sized handyman. I like plastic end caps for projects that don't require a smooth finish. In my case I used them to fill a pocket hole in a bunk bed I built for my kids. They are much easier to work with than wooden dowels as no regrinding is required. I admit I love the finished look I get with wood end caps, but plastic end caps look pretty good after painting. You'll also save a few minutes of your time. I would recommend that you make sure you grind the pocket holes before installing the plugs. They are not as strong as wooden dowels because they have a hollow insert. Grinding the holes to remove any burrs or scuffs will save you a headache. I definitely recommend them for projects that don't require a perfectly smooth surface.
