Should have bought many years ago!

I was skeptical about buying another plastic gizmo that ended up on my shelf that I would never use. It's not one of those, I intend to use it often. This gadget made it SO easy to make sushi (I made fake sushi with cooked chicken and sweet potatoes). First I tried the traditional way, just using a bamboo mat and then a sushi dryer. A mushy sushi is much better because you get a tighter roll with less air space and less likely to fall apart. You also get sharp ends that don't look ugly and you don't have to trim them. (Although I do like to put them in my mouth). ;) Tip 1: Since the dryer makes tighter rolls, you will end up with longer nori sheets. I pre-cut to the desired width with scissors and then rolled up my sushi. You will also have excess length that doesn't stay wrapped, trim it after twisting. Tip 2: Leave the trimmed nori. If you have extra rice to make an incomplete roll, you can use smaller strips of nori (see my photos for a small sushi roll on pieces of nori). I LOVE that I can make smaller buns with this device. Tip 3: Don't worry about the rice not reaching the sides of the white sushi pot. Try to get as much as you can, but the good thing is that the sushi dryer helps fill in the gaps once the plunger is pushed. Tip 4: If you use bamboo mats, wrap them with cling film. I've seen it in recipes online. A great idea. It became much easier to clean up.
