I am a professional chef who has worked in the industry for many years. I research various knife companies before ordering any of my knives. The knives in my collection range from Okami, Mercer, wustoff and mostly Mac. I can only tell you my opinion on this brand, after a year of working with my chef I will give them a token of my appreciation, whatever a chef's knife is. I recently bought this knife for one of my Chef de Party. The knife is well balanced, it's a thinner high quality Japanese style steel, it retains its sharpness although a bit wide for my personal preference, but uses it on a daily basis and loves it. I would rate this knife an 8 out of 10 as it's more of a mid-range knife compared to my more expensive $300-400 Mac. Hope that helps
