Product: Global Ceramic Whetstone, Medium GritRating: 5/5 (very good) My friend is a professional sushi chef from Japan who sharpens his knives daily using the traditional whetstone method.I learned how to sharpen by watching him.but since I'm not a professional cook and my knives are made of a harder alloy, I don't have to make it nearly as often as he does.Anyway, I bought my Global Stone a few years ago, just after they first became available here in the US and I absolutely love it.The Global Stone offers one large, flat surface for a nice, long, consistent hit, whether you prefer a smooth back-and-forth motion or a crescent motion The porcelain backing gives the stone good rigidity, and the non-slip rubber base helps keep it firm t stay on the counter. All in all a great stone. All you need is a sturdy stand, a plant sprayer filled with water and a rag (to soak up the resulting steel-colored water) and you're ready to sharpen. Minor nits: I wish the non-slip base had a bit more surface area instead of being hollow, because in order to apply adequate force to the blade, I had to place a damp beard towel between it and the counter to prevent it from slipping. In other words, a non-slip pad is good, but not as effective as the rock it supports. OVERALL: Highly recommended. However, please note that the medium grit stone is designed to be used in combination with the Global Fine Grit stone (which is used to finish the edge created by the medium grit stone).
