I am a professional chef who gave this knife to my 'other maternal brother' for Christmas 2019. He is just beginning his culinary journey. I trained him to work in my first and only high volume $$$ kitchen last summer and fall. By the way, nicely packaged as a gift. Clean, shiny and damn sharp right out of the box. The guy learned the correct technique on a wet rock, and now he will pass the litmus tests of the culinary world for both the "perfect paper slice” and the "clean shave of the forearm”. The prodigy seems to really enjoy it, and his skills have skyrocketed since he got his own blade. The handle is a bit small and awkward for my liking, but if you like that sort of thing, you'll love this thing. It's no surprise that it balances perfectly on one finger since it's actually made.
